homemade butter

my friend chef chris gave me a card for his new place and on it was a recipe for butter because his new place is called bread and butter. my mom finally got a butter churn and we made some butter tonight.
 good quality cream from jimbos
 churn is made in france


 its turning to butter in just a couple minutes

 a cool butter mold with a cow on it
 you have to squeeze out the liquid with cheese cloth

 this is the buttermilk we got and we will make either banana bread or shortcakes with it

the best fudge sauce ever



I made this before school yesterday for my moms latte and it takes only like 3 minutes
 only 1 ounce chocolate, I used bittersweet valrhona and a pinch of salt and 2 tbsp valrhona cocoa powder
 weigh 100 grams glucose and heat it with 1/4 cup sugar and 1/4 cup cream
pour over chocoate and let sit 1 minute then whisk it up. thats it. YUM

Fruity mellow crunch cookie

So we saw some leftover fruty pebbles crunch in the pantry and decided to make a new cookie.
Here it is. i made up the name because blackberry-fruity pebbles-marshmellow cookie was too long.
 we used the bluberries and cream cookie recipe from momofuku and left out the milk crumb and added little tiny marshmellow bites from kraft and the fruty pebbles crunch from momofuku and some freeze dryed blackberries.
well I picked out the blackberries because I dont like the seeds!

 they wont stick but you have to use oil spray on the iron

white chocolate macadamia nut caramel popcorn

ok well my Mom made the caramel corn because I might burn myself. I piped the white chocolate on.

it was hard to pipe the choclate in little lines without it going everywhere.
The recipe came from David lebovitz blog and we changed it a little.

Bouchons

 Here I am measuring the ingrediants.
 I usually make Thomas Kellers bouchons but we tried these. Thomas Kellers are a lot better!!!
 I melted the chocolate.
 here I am using the pastry bag to make the bouchons. Its hard though.
thats homemade salted carmel gelato in the middle. YUM

my first baking demo Blueberries and Cream Crumb

so my brother got his games took away and so he did a magic show for everone. So I did a baking demo but I think it wasnt as popular as the magic but it was still good. Oh and I havent put many things I have been baking because our computer is broke and wont let me put the pictures on and my dad hasnt had time to fix it. I did this last Saturday and it was my first baking demo.
my mom helped me make these tickets for everone and the time was on the back
 here I am holding up the tickets for my show. I only did the milk crumb for this resipe because the whole thing would take too long maybe.My dad was suprised how complicated the resipe was. And the bluberry and cream is his favorte cookie from Momofuku milk Bar. Thats my new baking book
I showed everyone how to use the scale but my mom forgot to take a picture of that part. oh yeah, all the mess by the book is corn starch. That stuff is realy messy!!!!!!!!!!! I think there was some of the floor too
