sugar dreams again

Ah, my favorite cookie. I just made these and now I'm going to bed. Now I can take 1 or 2 in my snack tomorrow. ok, well my mom made the dough when I was at school and I took some out of the freezer and baked them. These ARE NOT like regular sugar cookies. They are way better.

lunch was great. I ordered the macaroni gratin and got lemon and rasberry sorbet for dessert.  This is WAY better than school.

Ratatouile french toast

Today I am playing hookie to go to bouchon beverly hils so i made ratatuile french toast. I did it all by myself and i added some orange zest to the resipe. YUM. We are having lunch at bouchon. Its really fancy.

ripe bananas

we always have really ripe bananas and this is what i do with them




yummmmm. banana bread with cinnimon topping. My Mom says this bread is diffrent than most banana bread because it has a more fine crumb and is not so dense.

well this is not dessert

well this is not dessert but my mom said to put it in my blog anyway. We saw a video on chow.com and it was a cool video about how to cook beans. I like to watch the your doing it wrong videos. My friend Chris told me about chow.com. I dont like beans but my mom said someday i will like them. Rancho gordo has so many beans I never knew there were so many beans. Some look cool but i sitll don't think i will like them. My brother Alex loves beans and so does Sophie. Alex likes brown ones and Sophie likes black ones but I think I don't like the way they feel I think. We made tritip meat and some little beans and I washed them before school  and my mom cooked them when i was at school.

Churros

We made churos yesterday but my mom was afraid to let me squeeze in the dough because I might get burned. I really wanted to but at least I got to cover them with cinnimon and sugar. The resipe came from my sweet mexico and I want to bake with Fany in June when we go to new york city.  Her resipe is the best even better than the churos at legoland fun town except we didnt have chocolate sauce to dip in because my mom said that would ruin the flavor of the special cinimon. The cinimon came from rancho gordo and its called canela. Here they are YUM.

Blueberry muffins

I made these this morning from my clinton street baking company book. My mom got a bookplate for me signed by DeDe and Neil. These are the best blueberry muffins and I like the papers because they are cool to peel and make the muffin look fancyer.
This one is kinda short because I ate the big ones before i remember to take a picture

I made these for my teacher and for Mr. John

I like devilsfood chocolate cupcakes. I use vanilla buttercream from my Ad Hoc book.
My Mom helped me put them in a box and chopped the chocolate for me.

Sugar Dreams

this is one of my favorite cookies and my brother too. Its called a sugar dream and my Mom got the recipe a long time ago from a newspaper in Fresno. They are from a place called Hungry Bear Cookies. Here they are. I can eat a lot of them but my mom only lets me have 2 or 3. She helped me scoop them out and then freeze so anytime I want them I can just pop em in the oven fast.
Here's the recipe:
Sugar Dreams
1 cup minus 2 tbsp canola oil
4 cups all-purpose flour
2 cups plus 2 tbsp granulated sugar
½ lb. plus 1 tbsp unsalted butter (room temp)
3 tbsp sourcream
2 tsp. cream cheese (room temp)
1 tbsp. vanilla bean paste or 2 tsp. vanilla
1 tsp. baking soda
1 tsp. coarse salt
1 egg yolk
Mix butter, cream cheese, sugar & vanilla. Mix at medium speed until smooth and all butter specks are dissolved.
Add sour cream. Mix just until blended at medium speed.
Add oil & egg yolk. Mix at lowest speed until oil is slightly mixed, then increase to medium speed until mixture is well mixed but still slightly lumpy, scraping bottom of mixing if needed.
Add flour, salt & soda. Mix until just blended then add 10 seconds more of mixing time at medium speed.
Cover dough & refrigerate until firm or you can scoop out into balls & freeze in individual bags. (I use a 1 ½”scoop to scoop dough out onto a ¼ sheet pan, squeezed together in rows, stick in freezer until it’s firm enough to handle, maybe 10-15 mins. , then I throw them in ziplocks, 12 to a pack……. When I’m ready to bake them, I lay them on cookie sheet & let sit maybe 5 minutes before baking). Keep in mind depending on how frozen/cold your dough is will affect the baking time.
Bake at 325-350 degrees (depending on temp of dough) for 5-6 minutes, turn pan & bake another 5-6minutes. They will be just barely golden around edges. They will look underbaked, but if the edges are turning golden, they are done. If they are overbaked, they won’t taste the same. Cool on pan until firm enough to lift. They conintue to firm up a bit sitting on the hot pan, but if the tribes can’t wait for them to cool, I usually let them sit 5 minutes on the pan, then transfer the silpat/parchment to a cooling rack . They are a very delicate cookie & you can’t handle them until they’re just about completely cool.
Enjoy! The recipe makes about 5 dozen cookies. These are a must-have freezer item!

Bouchon Las Vegas

This is where I met my friend Chris.He told me to make a blog for the stuff I bake. He is soooo nice. We went to las vegas in June

this is me and chef chris. the kitchen was cool. Chef chris gave me a plate and I have it in the dining room. Everyone always asks me about my plate. Chef Chris made SO MANY desserts and they kept comeing and comeing to our table. I coudn't believe how many deserts were at our table and I think I had most of them.

Bouchon Beverly Hills

This is me eating some delicious dessert at Bouchon in Beverly Hills. This was in the summer. I met Chef Rory and he is rely friendly. I saw the kitchen and it was REALLY big. I liked the little bakery downstairs where you can buy bags of cookies.

this is me shaking hands with chef rory. He said if you work hard you can get a good job even if you don't go to a fancy chef school.

coconut gelato

Yum. Yes I had 4 servings. My mom forgot about the coconut in the freezer so i ate the last 2 scoops out of the coconut.
I didn't help make the gelato today but I helped eat it
